Bok Choy & Mushroom Stir Fry

INGREDIENTS
- 1-2 tbsp sesame oil
- 1 large container of mushrooms of choice or a mix, roughly chopped
- 1 large or 3-4 small heads bok choy, cleaned and chopped in bite size pieces (can also use cabbage, broccoli, kale, and other hardy greens)
- 3 garlic cloves, minced
- 3 green onions/i’itoi onions, chopped
- 1 tbsp rice vinegar
- 2 tbsp soy sauce or tamari
- Salt and pepper to taste
- 2 tbsp sesame seeds
On medium heat, heat sesame oil in a medium pan, add mushrooms and bok choy. Cook until tender. Add garlic and onions and cook for a few more minutes. Add rice vinegar, soy sauce, salt and pepper, stir to combine and let the liquid reduce. Be careful not to over cook the bok choy or it will become mushy. After a couple minutes, turn off heat and sprinkle with sesame seeds. Taste and adjust flavors if needed. Serve immediately.
