Fall Harvest Salad

INGREDIENTS
- 4 oz. seasonal leafy green, chopped
- 1-2 seasonal fruits of choice, chopped (we used apples)
- 1-2 seasonal veggies of choice, chopped (root veggies work well here)
- 1/8 cup red onion, diced
- 1/4 cup pistachios or pecans, chopped (optional)
- 1/4 cup goat cheese feta (optional)
Dressing Ingredients
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp vinegar of choice (more to taste)
- 1 tsp herbs of choice (we used parsley)
- Salt and pepper to taste
Chop vegetables and nuts and set aside. Blend, shake or whisk all the dressing ingredients together. Add mixed greens to a bowl and top with fruits and veggies. Sprinkle with goat cheese, nuts and drizzle with desired amount of dressing. Lightly toss and adjust flavors if desired. Enjoy!
