Grapefruit Smoothie

INGREDIENTS

  • 1 sweet grapefruit, peeled and segmented
  • 2 cups frozen pineapple chunks
  • 1/3 cup vanilla yogurt of choice
  • 1 inch knob fresh ginger, peeled and grated
  • Milk of choice, if needed
  • optional toppings: chopped grapefruit, berries, seeds, nuts and granola

Segment grapefruit over a bowl so you can collect all the juice. Add grapefruit segments, grapefruit juice, frozen pineapple, yogurt and fresh ginger into a high speed blender and blend until smooth. Add a little milk if the smoothie is too thick. Pour into two glasses or serve in a bowl with your favorite toppings.
