Lion’s Mane Tacos with Citrus Slaw

Next time you’re at the farmer’s market, grab some lion’s mane from Desert Pearl Mushrooms and make these delicious tacos! This is also a fun recipe for kids to participate in – they can shred the mushrooms with their hands!
Citrus Marinade (used both as a marinade and in THE slaw)
- Zest from 1 orange
- 2 large oranges, juiced
- 2 tbsp olive oil
- ½ lime, juiced
- ½ tsp chili powder
- Salt and pepper to taste
Lion’s Mane Taco “Meat”
- 2 large pieces of lion’s mane mushroom, shredded
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp coriander powder
- ½ tsp dried oregano
- Salt and pepper to taste
- ½ of the above Citrus Marinade
- Small corn tortillas
Citrus Slaw
- 2 cups of greens, thinly sliced (we used kale, brussels sprouts, and broccoli leaves)
- 1 carrot, shredded
- ¼ cup cilantro, chopped
- Remaining Citrus Marinade
- 1-2 tbsp mayo (optional)
- Salt and pepper to taste
Preheat the oven to 400 degrees. Shred lion’s mane mushrooms into small pieces (with your hands) and place in a bowl, add all taco “meat” ingredients to the bowl and toss to coat, let sit for 5 minutes. Spread lion’s mane on a parchment lined baking sheet and place in the oven for 20 minutes, stirring halfway through. Bake until golden brown and a bit crispy on the edges.
While the lion’s mane is baking, prepare the citrus slaw by placing all ingredients in a bowl and tossing until well combined, set aside.
Heat tortillas and make tacos! Feel free to add chopped tomato, salsa or hot sauce! Enjoy!
