Maple-Cinnamon Toast w/Citrus & Chevre

- 1 Arizona Grown Orange, Thinly Sliced & Seeds Removed
- 2 Tablespoons of Sugar
- 1/2 Teaspoon of Vanilla
- 1/2 Stick of Un-Salted Butter, Room Temperature
- 1-1/4 Teaspoons Ground Cinnamon
- Sea Salt, To Taste
- 2 Tablespoons & 1 cup Pure Maple Syrup (or Local Honey)
- 4x 1/2 Inch Thick Slices Brioche (or Challah Bread)
- 1 Cup of Fiore Di Capra Chevre Goat Cheese Spread
Preheat oven to 450 degrees. Place orange slices, sugar and vanilla in a small bowl. Toss to coat orange slices. In a medium bowl mix butter, cinnamon, a pinch of salt, and 2 tablespoons of maple syrup. Spread cinnamon butter on one side of each piece of brioche. Place on a rimmed baking sheet and toast in over until brioche is golden brown (the bottoms should be very crisp), 8-10 minutes. Place each toast on plates and top with chevre and orange slices. Drizzle remaining 1 cup of maple syrup over toasts and finish with a sprinkle of salt.
