Okra and Tomato Stir Fry
How do you eat your okra? We like it all different ways, raw, sautéed, roasted and grilled. Okra is in-season right now in Southern AZ. Support your local farmers and grab some at your local farmers market!

Ingredients
- 1 tbsp olive oil
- 1/2 cup onion, chopped
- 3 garlic cloves, minced
- 1 lb okra, chopped
- 1 cup small tomatoes, chopped
- 1 tsp vinegar of choice
- Salt and pepper to taste
Heat oil in a medium pan, add onion and garlic and cook until fragrant. Add okra and cook until tender. Add tomatoes and cook for a few more minutes. Add vinegar, salt and pepper, stir to combine. Taste and adjust flavors if needed. Enjoy!
