Parsnip Fries with Lemon Garlic Tahini Sauce

Ingredients
- 1 giant parsnip or 4 small parsnips
- 2 tbsp olive oil
- 1 tbsp dried herbs of choice (we used oregano)
- Salt and pepper
- Fresh parsley (optional)
Sauce
- ¼ cup tahini
- ¼ cup water (enough for desired consistency)
- Juice from 1 lemon
- 1 tsp garlic powder
- Salt to taste
Preheat the oven to 400 degrees. Wash and remove ends from parsnips, chop into long fries, place in a bowl and toss with olive oil, dried herbs and salt and pepper. Arrange on a parchment lined baking sheet, making sure that each fry has contact with the baking sheet. Bake for 30 minutes, flipping halfway through. Fries should be brown and crispy.
Make sauce by putting all ingredients in a bowl and whisking until smooth.
Dip or drizzle sauce on fries and sprinkle with fresh parsley! Enjoy!
