Peach Crumble with Oats and Dates
Peaches are in season and we couldn’t be more excited! You’ll find several varieties at the markets which are perfect to eat straight off the tree or in salads and baked goods. Peaches are high in Vitamin A and C, which support your immune system and eyesight. Our peach crumble recipe is delicious and healthy enough to be eaten for breakfast!
Servings: 6-8
Ingredients
- 6-8 medium peaches, sliced
- 3-4 tbsp pure maple syrup
- 1 packed cup of soft dates, pits removed
- 1.5 cups rolled oats
- ½ cup almond meal
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla extract
- ½ tsp salt
Optional add-ins:
- ½ cup nuts of choice
- ½ cranberries or raisins
Preheat the oven to 350 degrees. If dates are hard, soak them in warm water for about 5-10 minutes. Place sliced peaches in a 9×13 baking dish and toss with 2 tbsp maple syrup, set aside. Add all remaining ingredients to a food processor and blend until a crumbly texture forms. The mixture should be crumbly but will form a loose ball when pressed together. Taste and adjust flavors, add a little water if the mixture is too dry. Evenly distribute crumble over peaches, drizzle with 2 tbsp maple syrup (optional). Bake for 35-40 or until crumble is lightly browned and peaches are bubbling and tender. Serve with a scoop of ice cream or whipped topping! Store in the refrigerator.
