Peachy Keen Salad
Peaches are a magnificent fruit! Not only are they thirst-quenching, but they also contain tons of vitamins and minerals. Including vitamins A and C which aid in a healthy immune system and eye health. So, eat as many peaches as you want and stay healthy all summer long!
SERVINGS: 4 – 6
Ingredients
- 4-6 cups spinach or other greens of choice
- ½ cup microgreens
- 2 large peaches, sliced
- ½ small red onion, very thinly sliced
- 1 avocado, diced (optional)
- ½ cup goat cheese crumbles (optional)
- ½ cup toasted pistachios
Dressing ingredients
- 3 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 garlic clove, minced
- 1/2 tsp dijon mustard
- 1 tsp honey or maple syrup
- Salt and pepper, to taste
In a small bowl, whisk together dressing ingredients and set aside. Over medium heat, toast pistachios until light brown (not required but adds a lovely depth of flavor). In a large bowl, toss salad ingredients together, then add dressing and lightly toss. Taste and adjust flavors. Enjoy!
