Rainbow Root Veggie Salad
SERVINGS: 4-6
INGREDIENTS
- 1 medium beet (or 3-4 small beets), shredded or finely chopped
- 3 medium carrots, shredded or finely chopped
- 1 medium turnip (or 3-4 small turnips), shredded or finely chopped
- 1 bunch greens of choice, julienned (optional)
- 1 bunch of green onions, finely chopped
- 1 bunch fresh herbs of choice, finely chopped (parsley or cilantro work well)
DRESSING
- 3 tbsp olive oil
- 2 tbsp vinegar of choice
- 1 tbsp lemon juice
- 1 tbsp honey
- Salt and pepper, to taste
Add all prepared vegetables to a medium bowl and set aside.
Using a whisk, mix together all of the dressing ingredients in a small bowl. Pour over the salad and toss to combine. Taste and adjust flavors as needed. Serve immediately.
