Sparkling Dill Lemonade

Putting dill in your lemonade might sound odd, but this drink is delightful and refreshing. Take advantage of citrus season by making a pitcher of this bubbly beverage to share with friends and family.
- ½ Cup local raw honey
- 2 ½ Cups filtered water, divided
- 1 Small bunch (about 1 packed cup) dill fronds
- Zest and juice of two lemons
- Sparkling water
Make the simple syrup: Combine honey and 1 ½ cups of water in a small saucepan over low heat. Stir the mixture until the honey has fully dissolved. Remove the pan from the heat and allow the syrup to cool to room temperature.
Meanwhile, place the dill and 1 cup of water in a high-speed blender. Blend until the dill is pureed, then strain the liquid through a fine-mesh sieve, discarding the solids.
Combine the simple syrup, dill “juice”, and lemon zest and juice in a carafe or jar.
Fill glasses with ice, then fill each glass with ⅓ part dill-lemon juice and ⅔ part sparkling water. Taste and adjust if needed.
