Winter Squash Hash
SERVINGS: 4-6
Ingredients
- 2 tbsp olive oil
- 1 small shallot or onion, thinly sliced
- 2 cloves garlic, minced
- 2 cups winter squash, peeled & cut into 3/4 inch cubes
- 1/2 cup peppers of choice, thinly sliced
- 2 cups kale or other hearty greens, julienned
- 1 tsp thyme, rosemary, or sage, minced (or all 3)
- 1 tsp vinegar of choice
- Salt and pepper to taste
Heat oil in a medium pan, add shallot and garlic and cook until fragrant. Add squash and cook for about 10-15 minutes, until a bit browned and tender. Add the peppers, kale, herbs and vinegar, cook a few more minutes. Add salt and pepper to taste.
